You could try getting a Raspberry Pi Zero together with some kind of SPDIF output card, but that will probably go over $30.
I have no idea what pricing is like, but you could possibly try getting a used Logitech Squeezebox player.
If you’re desperate to stay on the cheap and don’t mind BT quality, you could also install Snapcast on an old phone, enable the Snapcast player provider and then use the phone to connect to your speakers over Bluetooth.
I can relate, with every update I’m like “Wow this is going to optimize my setup so much” and then I just don’t change anything lol

Your link doesn’t work, but I still found what you mean. I think at that point I’d probably look into the Microsoft Wireless Display Adapter or something similar instead, as Miracast on Linux actually works quite well with GNOME Network Displays. But my current goal is not having to connect any additional hardware to the projector, so I will be looking into pyatv for now.
I can’t find any “funtax” user in the linked openairplay repo, but it appears that I have completely missed pyatv’s ability to stream video. As long as it can stream video I think I can make it do screen mirroring too. Thank you very much, I will be looking into pyatv now!
I don’t know if this works for all Ubisoft games, but for Rayman Legends there is a dll that will circumvent the stupid Uplay Launcher and just make it launch normally (see https://steamcommunity.com/app/242550/discussions/0/3647273545686004759/ , comment by murla)

I started making an Android app for it here. It’s obviously still in a very early stage, but it can already kind of display profiles. Also disclaimer I don’t really know what I’m doing, this is more of a yolo I wanna look into Android app development kinda thing.

Ein Freund von mir hatte ein ähnliches Problem, dazu kam aber noch, dass obwohl IPv6 mit DynDNS funktioniert, der Vodafone Router nur Port 80 und 443 freigeben konnte, auch wenn im Interface ein anderer Port angegeben war.
Wir haben das mit einer gebrauchten Fritzbox 6490 Cable für ca. 30€ gelöst (unterstützt zwar kein Docsis 3.0, aber das sollte für Anschlüsse unter 500 Mbit/s kein Problem sein soweit ich weiß). Damit kann man dann einfach Port-Freigaben machen und dann z.B. per Wireguard auf das lokale Netzwerk zugreifen.
Zusätzlich kann man wie jemand hier schon gesagt hat bei Vodafone anrufen und nach Dual Stack fragen (IPv4 + IPv6), was auch meist kostenlos freigeschaltet wird (hat mein Freund auch gemacht). Über IPv4 klappen solche Sachen meiner Erfahrung nach besser.
Edit: Wenn du nur nach einem Tool für Remote Desktop suchst, ich habe mit Parsec sehr gute Erfahrungen gemacht, einfach installieren, Account erstellen und fertig.
Edit 2: Anscheinend unterstützt Parsec (noch?) kein Hosting von Linux aus
